Singapore Chilli Crab 新加坡辣椒蟹

Ingredients:

Crab,1KG~1.2KG

Peanut Oil(for step 2),146g

Chilli Crab Gravy:

Fried Peanut Oil (for step 4),10g

Prima Taste Sweet &Spicy Seafood Sauce,300g

Crab Juice(from step 1)

Water(for step 7),470g

Potato Starch,13g~15g

Wate(for step 8),30g

Eggs, 1ep

1.Clean crab(leaving crab roe intact)and chop the crab into piece leaving the legs attached,Keep the crab juice for later use.

2.Heat peanut oil and deep-fry crab(without shell)for 1 minute on medium heat.Turn over the crab and fry for another 30 minutes.

3.Remove the fried crab and drain the fried peanut oil for later use(Keep sufficient peanut oil for later use).

4.Add fried peanut oil(from step 3)and PRIMA TASTE SWEET&SPICY SEAFOOD SAUCE in wok.Stir-fry for 30 seconds on medium heat.

5.Add fried crab(from step 3)and stir well. Fry for 30 seconds on medium heat and ensure that crab is enenly coated with paste .Cover the wok.

6.Pour crab  juice (from step 1)into wok.Stir and mix well for 30 seconds.

7.Gradually add water around the wok.Cover the wok for1 1/2minutes.Stir and scoop the gravy onto  the crab.Place shell(from step 1)over the crab,with outer shell facing up.Cover for another 1-2minutes.

8.In a separate bowl, mix the potato starch and water.Add mixture to the crab and stir well.

9.Add beaten eggs around the crab and stir well for 20 seconds.

10.Add fried peanut oil(from step 3) and stir well.Transfer to a plate.

11.Garnish the dish with coriander leaves before serving with rice or bread.

雞肉冬菇燴時蔬

材料: 雞肉, 冬菇, 蔬菜

調味料: 大排擋走地雞粉, 糖.酒.味.醬油.香油. 蒜蓉, 生粉.

作法:

ü  首先用大排擋走地雞粉同粟粉醃雞肉半個鐘頭。

ü  同時將冬菇放喺鹽水中浸泡十分鐘後洗乾淨。

ü  再將自己鐘意的蔬菜飛一飛水。

ü  然後將雞肉炒到8成熟,撈起。

ü  爆香蒜蓉、加入冬菇、蔬菜同雞肉,落啲醬油,鹽,糖同少少水炒勻後,蓋上煲蓋用大火燴3分鐘即可
